Single-layer cakes are one of my favourite things to bake. They're quick, easy and still feel like a proper treat - plus there's less washing up at the end. They're great for beginners and anyone craving something sweet who doesn't want to spend hours in the kitchen. If you're in the mood for some simple delicious baking, here are 7 single-layer cakes I think you'll love

​Flourless Lemon Cake​

A favourite in the SSM community, this lemon cake is moist, super lemony, buttery and so delicious. It's easy to make and just happens to be gluten-free too. It's been made over and over again.

Deborah said "I made this cake for Passover (last Saturday) and it stole the show….one guest had 3 pieces and took some home, too. It’s just perfection. I will be making this cake forever now…."

​Blueberry Sour Cream Cake​

Moist, tender and absolutely loaded with fresh blueberries, this blueberry sour cream cake doesn't even need a topping to look gorgeous.

​Pistachio Chocolate Snack Cake​

Possibly my new favourite this pistachio chocolate snack cake starts with a one bowl chocolate cake and is topped with the most scrumptiously creamy and nutty pistachio buttercream.

​Chocolate Crumb Cake​

With a soft and moist chocolate cake with a river of chocolate chips running through it and a chocolate crumb topping this cake is gorgeous texturally and in flavour. And it's so easy!

Leslie said "I made this on a hot day when I couldn’t be bothered with frosting a cake. It is SO good! I followed the recipe as written, using sour cream instead of buttermilk, and it is a big hit."

​Blueberry Chocolate Cake​

This blueberry chocolate cake starts with a delicious one bowl chocolate cake that's soft and moist and it's topped with the loveliest blueberry frosting. Blueberry and chocolate are a winning combo too.

​Lemon Blackberry Cake​

Beautifully soft and fluffy, this bright lemon cake studded with fresh blackberries is a winner. Topped with a very simple blackberry swirled cream it's so quick and easy.

​Caramel Mud Cake​

Lovers of dense, rich and sweet cakes will love this caramel mud cake. A simple cake with a simple glaze. Even the decoration is just caramelised chocolate peeled from a bar using a vegetable peeler.
